One of my favorite topics to talk about is nutrition, so I love when people ask me questions about getting started on a more plant-based diet. I became a vegetarian in 2008 and have dabbled in educating myself about a healthy diet ever since and these 4 best vegan cookbooks have helped a ton.
My most used resource for new recipes is Pinterest, and I tend to stick with a few favorites once I find the ones that work for my skill set and that my family enjoys eating. However, every once in a while, I go the old fashioned way and use a cookbook. Here are a few of the best vegan cookbooks depending on which type of vegan/vegetarian most suits you.
This is my absolute favorite cookbook at the moment. I use it to meal plan at the beginning of every week, as well as following the author’s blog and Instagram page for even more meal inspiration. The recipes are creative but simple and practical, and shockingly full of so much flavor. All of the recipes either require 10 ingredients or less, one bowl, or 30 minutes or less to prepare. My current personal favorite is the Peanut Butter Pad Thai.
Since becoming a mom to kids ages two and under, I have grown to love my crockpot now more than ever. Healthy food does not have to be sacrificed for convenience! There are so many delicious vegetarian and vegan recipes that can be used with the slow cooker, which is great because that means less time that you spend cooking. The fun thing about this cookbook is that it also offers a few salad ideas to go with your crockpot meal, which makes meal planning even easier!
